STEAK WITH ONIONS CUBAN STYLE.

Quickly cooked, fork-tender steaks smothered in onions with a touch of citrus and cilantro.
INGREDIENTS:
2 pounds sirloin steak, sliced thin (about 8 ounces per serving)
1/4 cup olive oil for sautéing
2 cups sweet onions, sliced thin
2 cups sliced fresh mushrooms (optional)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cumin
1/2 teaspoon Spanish sweet paprika
6 cloves garlic, minced
2 tablespoons fresh lime juice
4 tablespoons butter
1/4 cup chopped fresh cilantro
Using a meat mallet, moisten the steaks with a little water and place between two pieces of plastic wrap and pound out to a thickness of about 1/4 inch.
Heat the olive oil in a frying pan at medium heat. Add the onions and sauté briefly. They should still be slightly crisp. Remove onions. (If you are using mushrooms, add them and remove at the same time as the onions.)
Sprinkle each steak with salt, black pepper, cumin, and paprika and rub it in.
Add the garlic to the pan and sauté for 1 minute only. Immediately add the steaks and sauté to desired doneness, turning once only. These thin steaks will cook very quickly. Medium-rare calls for a very quick flip — no more than a minute or so on each side.
Remove the steaks and place them somewhere where they’ll stay warm and away from the grasping mitts of your hungry sister-in-law. Deglaze the pan by adding the lime juice and the butter and continuing to heat, stirring constantly. Cook long enough to reduce (thicken) somewhat.
Cover each steak with the sautéed onions and mushrooms. Pour the sauce over the steaks and sprinkle with chopped cilantro.

Filetes cocinados rápidamente, horquilla oferta cubiertas de cebolla con un toque de cítricos y cilantro.
INGREDIENTES:
2 libras Solomillo de ternera, cortados en rodajas fina (alrededor de 8 onzas por porción)
1/4 taza de aceite de oliva para sofreír
2 tazas de cebolla dulce, cortados en rodajas finas
2 tazas rebanadas de champiñones frescos (opcional)
1 cucharadita de sal
1/2 cucharadita de pimienta negra
1/2 cucharadita de comino
1/2 cucharadita pimentón dulce Español
6 dientes de ajo, picado
2 cucharadas de jugo de Lima fresco
4 cucharadas de mantequilla
1/4 taza de cilantro fresco
Con un mazo de carne, humedecer los filetes con un poco de agua y colocar entre dos trozos de plástico y libra a un espesor de aproximadamente 1/4 de pulgada.
Calentar el aceite de oliva en una sartén a fuego medio. Añadir las cebollas y saltear brevemente. Todavía estén ligeramente crujientes. Retire la cebolla. (Si utiliza champiñones, agregar y quitar al mismo tiempo como la cebolla)
Espolvorear cada filete con sal, pimienta, comino y pimentón y frotar.
Añadir el ajo a la sartén y saltear durante 1 minuto solamente. Inmediatamente añadir la carne y saltear a punto de cocción deseado, girando sólo una vez. Estas finas carnes se cocinan muy rápidamente. Medio raro pide una muy rápida del tirón–no más de un minuto o así sucesivamente a cada lado.
Retire los filetes y colocarlos en algún lugar donde permanecen calientes y de los guantes para agarrar de su cuñada hambre. Desglasar la sartén agregando el jugo de limón y la mantequilla y continuar al calor, revolviendo constantemente. Cocinar el tiempo suficiente para reducir (espesar) algo.
Cubrir cada filete con el salteado de cebollas y champiñones. Verter la salsa sobre los filetes y espolvorear con cilantro picado.
