Here is a nifty recipe for cod fish fritters. They are easy to prepare and taste great, so next time you invite friends over, prepare a batch for them. They will be impressed with your culinary know-how.
Ingredients:
12 oz package of Choice boned Salted Alaskan Pollock Fillets or equivalent (yields approximately 20 small fritters)
1 onion
parsley flakes
2 eggs
2 tablespoons of flour
Instructions:
Cut cod fish fillets into chunks and rinse with water.

Place cod fish in a pot and add enough water to cover all the pieces.
Cod fish in water before cooking.
Bring the cod fish to a boil. Discard half the water, replacing it with fresh water.
Bring to a boil again. Lower heat and boil slowly for 15 minutes.
After 15 minutes, taste the water in which you boiled the cod fish. If it is very salty, further desalting is required. Discard all the water, and transfer the cod fish pieces to a large bowl.
Pour fresh water into the bowl and let the cod fish soak in it for 2 – 3 minutes.

Discard all the water in the bowl, and shred cod fish with your hands.

Taste the cod fish. If it is still too salty, pour fresh water into the bowl, but this time discard the water immediately. Repeatedly rinse the cod fish in this manner, tasting the fish every time, until the salt content of the cod fish is to your liking. Caution: Cod fish without salt has no flavor, so use common sense.
Place the cod fish pieces into your food processor or electric chopper, add 2 eggs, and mince together.

Chop a 3 oz piece of onion and mince the onion with your electric chopper.
Add the minced onion to the minced cod fish and mix thoroughly.
Sprinkle a teaspoon of parsley flakes over the cod fish fritter dough, and mix.
Add 2 tablespoons of flour to the dough and mix thoroughly.
Cod fish fritter dough is ready.
Place a generous amount of cooking oil in a frying pan, and heat the oil at medium heat or so.
Cooking oil heats up.
Place evenly spaced spoonfuls of cod fish fritter dough in the hot oil.
Cod fish fritters begin to fry.
Flip over cod fish fritters after a couple of minutes or so. Fry to a golden brown.

Place fried cod fish fritters on a plate lined with a paper towel to absorb excess grease.
